Recipe: Breakfast- Cranberry Pecan Energy Bars

Expertise: Proficient (I just had to use my food processor which is one of my kitchen must-haves!)
Ease: Super easy!
3 Ingredients:

  1. Nuts
  2. Dried Fruit
  3. Dates

Customizing: I already customized my recipe by using cranberries and pecans. You can pretty much swap whichever dried fruit and nut base you want (raisin/almond, apricot/walnut, blueberry/macadamia, etc). You can add a forth ingredient such as dark chocolate, chia seeds, or coconut if you want as well. There is a lot of flexibility.
Repeatability: Definitely, my husband takes energy bars to work every day so I have started making homemade versions because the cost adds up and I enjoy making them. He ate this up quickly and has been begging me to make them again!

Energy bars

Recipe: Lunch- Grilled Portobello Quesadilla with Corn Avocado Salad

Expertise: Expert
3 Ingredients:

  1. Portobello Mushrooms
  2. Grated Pepper Jack
  3. Flour Tortillas

And for the Salad:

  1. Corn
  2. Avocado
  3. Scallions

Ease: Super easy even without a grill. I have the Calphalon grill pan and a quesadilla maker (like a waffle maker for quesadilla). The salad was amazing and I made it while the quesadillas were cooking.
Customizing: You can easily swap the veggies in the quesadilla for your favorites. We are huge fans of cherry tomatoes and peppers. Mix up the cheeses too. You are not committed to strictly using pepper jack. The salad was perfect, I wouldn’t do a thing to it.
Repeatability: I made these both the next day!

nutrition food health dietMelissa’s Nutritional Tidbit: This meal has a lot of healthy components, which makes it a super meal! It has a nice amount of vegetables something that most Americans don’t get enough of. The avocado provides healthy fats(monounsaturated fats), which is the kind of fat you need in your daily diet. Even though mushrooms are a fungus, they have antioxidants, fiber, and a plethora of vitamins and nutrients, like vitamin D.

  Another reason why this meal is great is because it’s incredibly flexible.You can add more vegetables to the meal if you’d like. Substituting the cheese with another protein (chicken, tofu, etc) is another option. You can also use whole wheat tortillas to get more fiber in. 

Grilled Portobello Quesadilla

Recipe: Dinner- Flaky Mozzarella Tomato Tart

Expertise: Expert pizza maker, novice tart cooker.
Ease: Super easy and quick. The pastry is already coated in flour so you really don’t need to cover the counter with additional flour to roll out the dough.
3 Ingredients:

  1. Puff Pastry
  2. Mozzarella
  3. Cherry Tomatoes

Customizing: This is another recipe where you can mix up the cheeses and veggies or add more. I made another with peppers and the left over basil from our dessert. It was super yummy.
Repeatability: Maybe, I think I would rather use a thin, pizza crust. The middle of the tart was very soggy. When I try a recipe I also test it for left over potential because our workday lunches are usually leftovers. My husband was not a huge fan of this for lunch. I know my mom makes tarts a lot so I want to check with her to see what I did wrong. The edge pieces were the best.

Tomato Tart

nutrition food health dietMelissa’s Nutritional Tidbit: Like Lindsey said, this recipe is able to be customized to your liking. You don’t like cherry tomatoes? No problem- switch in bell peppers, broccoli, spinach,etc. The more, the merrier! Who says you need to put on just one vegetable? Put on your vegetables, cheese, spices,maybe a drizzle of olive oil and voila! There’s your delicious pizza with a bit more nutrition on it.

Recipe: Dessert- Melon With Sparkling Wine

Expertise: Proficient (you just need to cut and pour)
Ease: Ridiculously easy
3 Ingredients:

  1. Melon
  2. Sparkling Wine
  3. Fresh Basil

Customizing: I already customized this recipe because I was supposed to use honeydew melon and I could not find any in Florida. I imagine you could easily switch the fruit out. Raspberries would be great I imagine.
Repeatability: Not likely.  It was ok, but I’ll just drink the wine and eat the melon separately. Melon with Sparkling Wine
